Wines that are made in Qvevri are becoming increasingly well-known in the UK and the world over. Originating in Georgia over 8,000 years ago (i.e. predating Greco-Roman traditions of winemaking) a Qvevri is a large egg-shaped terracotta pot that is buried in the ground up to its neck. The word literally means ‘that which is buried’. Essentially, the entire winemaking process takes place within the Qvevri – from fermentation right through to maturation. This process of leaving fermenting grape juice on the grape skins and stems creates wines of extraordinary flavour, complexity and colour. Qvevri wines made using white grapes such as Rkatsiteli and Mtsvane produce dry, full-bodied, aromatic orange(-coloured) wines. The extended skin contact during the maceration process is what gives them their wonderful amber colour. Red wines, often made from Saperavi grapes, are also produced in Qvevri, these are typically inky purple in colour with intense aromatics and a dense, supple texture.
