As interest in natural and artisan winemaking increases, a great deal of attention has recently fallen on Georgia’s ancient tradition of Qvevri winemaking. This method of winemaking dates back over 8000 years, and UNSECO has given it special protected heritage status. Qvevris are not the same as amphora – firstly, they are much larger, and are buried in the ground up to their neck to preserve a stable temperature. Secondly, the entire winemaking process takes place within the Qvevri – initial fermentation right through to maturation, with the fermenting grape juice often being left on the skins and even grape stems to produce wines of exceptional flavour and complexity. The Qvevri winemaking method inherently lends itself to a natural way of making wine, as the winemaker barely intervenes in the whole winemaking process. Once the grape juice is fermenting and the Qvevri is sealed, nature is allowed to take its course.
